We all lead busy and hectic lives, and that’s why I love make-ahead meals like this one.
It’s easy for me to say that you can just throw this meal together on a weeknight, no problem… I mean, I work from home and run a healthy food blog, so it’s not as difficult for me.
For other people – whether you’re a stay-at-home mom or dad, or maybe you to go to work full time – it’s great to have meals that you put together, sit down and enjoy a healthier (but delicious) meal with your family.
When you go to do your grocery shopping each week, just pick a few of your favorite meals; try not to overwhelm yourself with making new meals every night. For example, most people probably think I’m making something new and exciting every night, but that’s not the case! We have our go-to easy meal like turkey burgers and frozen sweet potato fries (Alexia brand is amazing!), and then leave a few days for creativity and new recipes from there.

This jalapeño popper chicken casserole is my favorite make-ahead meal… You can tailor this recipe and instructions to what works for you. The chicken for the recipe is made in the crockpot, so I will make this the morning before, shred it six hours later and place into the casserole dish, layer on the other ingredients and pop it in the oven when I’m ready to make it. These pumpkin chocolate chip oatmeals cookies are a delicious combination of the treat you grew up loving with that “fall” feel from the pumpkin, with some rich chocolate morsels. You won’t believe these are a healthier choice!
Now I’m a firm believer in enjoying the “real deal” desserts and treats once in a while, and this time of year – as least for me – I want to try everything from pumpkin treats to pies, peppermint mochas around Christmas, anything gingerbread… All of those things that make the season so special.

Spinach and Artichoke Chicken Bubble Casserole – I’ve seen a lot of these “bubble up” recipes lately, where you take pieces of biscuits and add them into a casserole and it bubbles up as you bake it… What a fantastic idea!
BUT… The problem is that most of these recipes use the whole can of biscuits for one casserole… To put that in perspective, one biscuit is 160 calories and there are eight in a pack. That adds quite a bit of calories (and fat) to your dish which yes, is delicious – but not on the healthier or lighter side when you consider your fitness.
Spinach and Artichoke Chicken
This spinach and artichoke chicken bubble casserole has just the right amount of tasty goodness from the popular “bubble up” dishes, only with way less calories!
You still get buttery flakey pieces of biscuit in almost every bite, but they’re balanced out with some filling veggies and chicken!
The “filling” of this dish is very reminiscent of a cheesy spinach artichoke dip; add some filling and lean chicken to it and you have a pretty hearty, wholesome meal.
It really is like having spoonfuls of spinach artichoke dip – but you don’t have to feel bad about it, haha
Chicken Bacon Ranch – With fall time approaching I thought I would start trying out some new heartier meals that are still healthy. I really enjoy taking flavor combinations that I love and make changes here and there to make a lighter version of a meal.
I feel like we should still enjoy the things we love from time to time (of course in moderation)… But if I can make some healthier versions of the foods we love, it makes the process of dieting so much more enjoyable!
With that being said just make sure to keep in to account your macros for the day (if you count macros). Some of these meals might be lower in calories, but could have a little more fat (which is giving you more flavor, of course!). This is why I try to work out most of the macros for you ahead of time so you know where you stand with each dish.
What I usually suggest is finding a few meals just like this chicken bacon ranch pot pie casserole and make them for your dinners. Keep your breakfast and lunch a little lighter; that way your macros should be on point by the end of the day!
Just a suggestion if you’re looking to stay on track and get great results with whatever program you might be on!

Now back to this delicious meal I have here… This chicken bacon ranch pot pie casserole really lives up to that name and is still a healthier meal! Hard to believe? See for yourself below
This is the ideal meal to transition into the fall; lots of protein-packed chicken cooked in a creamy ranch sauce, layered in a casserole dish with bacon bits, cheddar cheese and enclosed by a layer of buttery flaky crescents – all baked to a golden perfection!
Protein Crunch Cone Cereal Bars – Cooking Up Happiness
As a kid I used to live right behind a Dairy Queen… We’d always go there after winning one of our softball games with our team.
My favorite thing to get as a kid was always the blizzards… Man are those good! But when I got older I tried other things that were probably a little lower in calories – one being the crunch cone!
Now, if you haven’t had this you have to see if they serve it at your local Dairy Queen (not every location does). This crunch cone is your classic soft serve in a cone and then rolled in a mixture of peanuts, sprinkles and little crunchy pieces – OH they are so good! I haven’t had one of these cones in years, but it’s one of those things that you can still remember exactly how it tastes (and it’s still one of my faves).
Flash forward to this recipe… My intention wasn’t necessary to make a crunch cone-tasting protein bar, but after making said protein bar and taking a bite, I was reminded of them instantly!
Hence, I’ve named these: Protein Crunch Cone Cereal Bars
These protein crunch cone cereal bars are the perfect (and healthy) treat to curb that sweet craving your having… From the crunchy cereal that is coated in creamy peanut butter and protein packed vanilla icing, all topped off with sprinkles (just ’cause!).
These are even great right out of the fridge as it will give you that feeling of a cold and creamy treat, very reminiscent of my favorite crunch cone. Add a scoop of vanilla frozen yogurt on top if you really want to go crazy!
